Although I've never played the games, going by people's reactions who have, Fallout seems to have hit that sweet spot of telling its own story while remaining faithful to the games, which is not an easy thing to pull off.

The Last of Us is much more directly an adaptation, but Fallout still feels like a remix of game plots to me. Leaving the vault you grew up in to find your father is the whole premise of Fallout 3, while coming out of cryo is the premise of Fallout 4 (as is the Brotherhood arrival in Filly scene). Factional conflicts over a power source, with the key lost in transit by a courier is New Vegas.

Walton Goggins is great in this. I'll always like him for having such a ridiculous name, but he's a fantastically charismatic actor.
The other cast were ok, nobody really blew me away.
And the show as a whole? I'm with OR, it's ok. Not bad, not amazing. I'll probably watch S2, but I'm not going to be counting down the days. Maybe I'd have enjoyed it more if I'd ever gotten into the games.

It makes a few changes I'm not a fan of, namely the idea of Vault-Tec dropping the bombs to start the Great War rather than China striking first due to the war with the US and the idea of Ghouls going feral without a drug whilst in the games there's no mention of that, Ghouls only seem to go feral due to significant extra radiation exposure, but overall it's both a great intro into the world for newcomers and has plenty for fans to love.
